My favorite way to cook dinner for my family is on the grill. I love chicken, pork, or a juicy hamburger with BBQ sauce. So, summer means Paleo side dishes are in rotation each week. And, an added benefit is the nutritional profile of the many options below! Most are packed with veggies and naturally very low in carbs — many of them are also keto-friendly.
1. Primal Island Paleo Coleslaw
Paleo coleslaw is a family favorite. We even had it with our ham for Easter this year! It makes a great room temperature Paleo side dish with all your summer BBQ meat dishes, like ribs or burgers. Cabbage is nutrient-packed, high in vitamin C, supports healthy digestion, and is a good source of soluble fiber.
2. Paleo-friendly side salad with edible flowers
A gorgeous paleo side salad is a must at any Summer BBQ. I love to include a variety of different types of greens as well as edible flowers that I grow on my own farm. And, a light fresh homemade salad dressing makes this such an easy to prepare dish. And, I love to include dark greens such as kale in the mix. Kale is high in fiber, antioxidants, vitamin A and calcium, as well as B vitamins, vitamin C and potassium.
3. Simple but delicious low carb guacamole recipe
Who doesn’t love guacamole? A paleo summer would definitely be incomplete without it. Paleo guacamole is the perfect fresh summer side dish to serve alongside cucumbers, carrots, or paleo chips. Guacamole packs impressive health benefits as well. From heart-healthy monounsaturated fats to gut-friendly fiber, and potassium, an essential nutrient for regulating blood pressure and balancing the fluids in our body, avocados make guacamole a nutritious paleo side dish.
4. Nutrient-packed broccoli slaw with cranberries
On our farm, our broccoli has over-wintered and we are just starting to eat what we planted late last summer. I enjoy making paleo broccoli slaw with cranberries with BBQ chicken especially. Crunchy broccoli and sweet and tart cranberries are a great combo together. And, here is a nice article on the benefits of broccoli.
5. Red cabbage slaw
Red cabbage is such a beautiful vegetable to grow in the garden, and the perfect accompaniment to any BBQ meal. I love this recipe which uses creamy avocado dressing, and is completely paleo-friendly.
6. Paleo “chips” made from veggies, mushrooms, and more
Now these paleo chips are just fun! Kale, prosciutto, Brussels sprouts, and mushroom chips. Dip them in your favorite guacamole, salsa, or chip dip.
7. Tomato basil salad
Tomato basil salad highlights the best of the summer abundance in the garden or at the farmer’s market. There is nothing that says summer better than fresh tomatoes and basil!
8. Watermelon tomato gazpacho soup
Well, tomatoes and basil say summer for sure but I stand corrected. Watermelon is definitely up there on the list too — possibly even higher! Make this chilled watermelon tomato gazpacho soup on a hot day as your paleo side dish with BBQ ribs or chicken. With tomatoes, red bell peppers, cucumbers, and shallots this is a fresh-tasting paleo summer soup. It can even be made a day ahead of time!
9. Roasted fresh artichokes
If you have the time to roast fresh artichokes it is well worth it. If you’re looking for a quicker option, you can use artichokes in oil and roast them in the oven. The garlic aioli dressing is a rich creamy delight. The perfect paleo side dish to enjoy alongside a salad and hamburger.
10. Grilled paleo veggie skewers
Grilled veggie skewers are always a hit at summer paleo BBQs. You can grill any type of veggie you can think of, and they are yummy and packed with nutrition and variety. This recipe has a fresh lemon parsley dressing and the great suggestion to cook all the same veggie on one kabob, which means nothing is undercooked or overcooked. Then you can add everything to one bowl for a beautiful variety in color if you choose.
11. Lemon cucumber salad
Lemon cucumber salad is a crispy delight. If you can grow or find lemon cucumbers I highly recommend it! This recipe has a short list of ingredients so it’s great when you don’t have a lot of time. Simple and fresh with cucumber, dill, red onion and garlic.
Paleo summer BBQ side dishes are abundant, taste bud satisfying, nutritional packed and endless in possibilities. Try these out and savor the summer sun and smell of the grill in 2021.
